Choose Your Beef Share: Quarter, Half, or Whole
A Quarter Beef is an excellent choice for first-time bulk buyers or smaller households. It’s roughly 100+ lbs of packaged beef (about 1/4 of a cow), which usually fills ~4 cubic feet of freezer space (about the size of a small chest freezer). In a Quarter Beef, you’ll receive a well-rounded selection of cuts, for example: tender steaks (ribeyes, NY strips, sirloins, filets), a variety of roasts, short ribs, stew meat, and a generous portion of ground beef (around 40–50 lbs).
This mix comes neatly vacuum-sealed and frozen, so it’s ready to store or cook as you wish. Many families find that a quarter share can feed a family of four for several months. It arrives in about 5–6 boxes and gives you the convenience of a personal “mini meat locker” at home.
Need more beef? A Half Beef is about 200+ lbs of meat (twice a quarter) and requires roughly 8 cubic feet of freezer space (a medium chest freezer). With a half share, you’ll get double the quantity of all the cuts – plenty of steaks, roasts, ribs, and ground beef to keep even a big family or avid grillers satisfied.
Half Beef buyers often enjoy a slightly lower cost per pound (thanks to the larger volume). It’s a great choice if you have a larger freezer or want to split the bounty with friends or relatives.
For the ultimate supply and best per-pound pricing, a Whole Beef provides around 400+ lbs of meat (the entire animal). You’ll want a large freezer (approximately 16 cubic feet of space, or multiple freezers) to store this amount.

Professional Butchering & Dry-Aging:
Quality processing is key to great beef. After the cattle are humanely harvested at a USDA-inspected facility (for safety and quality assurance), the beef is dry-aged for about 10–14 days. Dry-aging allows natural enzymes to tenderize the meat and concentrate the flavor, resulting in a more tender, flavorful steak than “fresh immediately” processing. (Many supermarket meats are not aged this long!) We use skilled butchers to cut your beef according to standard specifications, yielding a balanced assortment of steaks, roasts, ribs, and ground. Place Your Order with a Deposit
To get started, choose your desired share size (Eighth, Quarter, Half, or Whole) and place an order through our website or by contacting us. Instead of paying the full amount upfront, you’ll pay a deposit to secure your share. This deposit is typically around 50% of the estimated cost
of your order. (For example, if a Quarter Beef is estimated at ~100 lbs, you’d pay roughly half of that value now.) The deposit allows the ranch to allocate your portion of an animal and begin the process.
Note: Deposits are non-refundable, since we commit to sourcing and processing your beef once you order – so make sure you’re ready for a freezer-full! However, your deposit does count toward the final price, of course. We accept major payment methods for the deposit (and if you have any special payment needs, feel free to discuss with us).

2.
Confirmation & Scheduling
After your deposit is received, our team will follow up (usually within a day or two) to confirm your order details. We’ll verify the share size, answer any remaining questions, and give you an estimated timeline. At this point, if you’ve ordered a Half or Whole and have specific cutting instructions or preferences, you can let us know – we’ll communicate those to the butcher.
Otherwise, for standard cuts (especially with Quarter shares), we’ll proceed with our proven cut plan that gives a bit of everything. We’ll also confirm your contact info for delivery
(phone and email).
Don’t worry if your freezer isn’t empty yet – you’ll have some time to make space while we handle the next steps!

3.
Ranch-to-Butcher Processing
Once your order is queued, the ranch schedules your beef for processing. Cattle are typically sent to the processor on the next available date. After humane harvest, the beef carcass dry-ages for about 10–14 days in a climate-controlled cooler.
This aging process is crucial for tenderness and flavor development. When aging is complete, the beef is expertly butchered into individual cuts. All the meat is then vacuum-sealed, labeled, and flash-frozen to lock in freshness. We receive the final weight of your share at this stage. In total, from the day you place your order to the day processing is finished is usually around 8–12 weeks. This timeline can vary a bit (depending on processing schedules or if you ordered during a busy season), but we’ll keep you updated on progress. We know you’re excited to fill your freezer, so we make sure to communicate along the way!

Final Invoice & Delivery Scheduling
As soon as your beef is processed and ready for transport, we’ll reach out to you. We’ll send your
final invoice by email, reflecting the actual weight of your beef at the agreed per-pound price (minus the deposit you already paid). The remaining balance can be conveniently paid online. Next, we arrange a delivery time with you by phone.
Delivery is coordinated in advance so you can be home to receive your beef.
We typically group Orange County deliveries over a day or two, and we’ll find a window that works for your schedule. Because your order is frozen, we want to transfer it to your freezer as quickly as possible – we’ll bring it directly from our refrigerated truck to you.

5.
Freezer Delivery to Your Door
OC Grass Fed provides free home delivery in Orange County – yes, we bring your beef right to you! On the scheduled day, we’ll arrive with your boxes of beef (remember, a Quarter Beef is about 5–6 boxes; larger shares will have more).
The beef will be rock-solid frozen and packed to stay that way during the short trip from our truck to your kitchen. We can carry the boxes inside for you or to your garage, wherever your freezer is located. All you need to do is have your freezer space cleared and ready. (Tip: Clean and organize your freezer a day or two beforehand so you can easily load your new supply of beef.)
Delivery is a quick process – we respect your time and aim to get your order to you in perfect condition. If for any reason you’re not available at the very last minute, let us know and we’ll work out an alternative; otherwise, plan on a smooth hand-off of your beef at the arranged time.

Stock Your Freezer & Enjoy
Once delivered, it’s time to pack your freezer with your new abundance of beef! We recommend organizing the cuts by type – for example, keep all the steaks in one section, roasts in another, ground beef in another – so it’s easy to find dinner on the fly.
Each package is labeled (e.g. “Ribeye Steak – 1.2 lb” or “Ground Beef – 1 lb”), which makes meal planning a breeze. If you purchased a Quarter Beef, ensure you have roughly 4 cubic feet of space cleared (an upright freezer shelf or a small chest freezer) to accommodate it. Half beef will need about 8 cubic feet, and a Whole about 16 cubic feet, as noted earlier. You might be amazed at how much meat you now have – it’s a great feeling! Because everything is vacuum-sealed and frozen, you can take your time enjoying it.
Properly frozen, well-sealed beef can stay delicious for well over a year, so there’s no rush.
